The new, whiter flour, and the new, whiter bread that it produced was therefore lacking in vital minerals and vitamins – and in vitamin B most of all. This would not have mattered much to people who were eating a varied and plentiful diet, but to those for whom bread was such a major element, this deficiency could cause serious long-term health problems.
