To quote Alana, "I am a cheese maker!" Here's a photo of my ricotta, topped with fresh blueberries, honey, and a touch of cinnamon. I served it to my partner and another friend for dessert last night. Hooray! Here is my counter with assembled tools and ingredients as I take a deep breath and begin the mozzarella adventure. My finished beauties! I was first introduced to mozzarella at an Italian Deli in New Jersey. The one pound cheeses came in a nice plump ball. But the two pound cheeses were braided. Just beautiful. And so much fun to pull them apart and eat the strings of fresh creamy cheese. I've never seen it braided anywhere since. So I decided to try it. I'm not sure what they did with the ends, and I didn't master that too elegantly on the first try, but I think it has some promise. So tasty. Instead of butter I used Earth Balance and omitted salt to make it dairy free. Picky 4 year old approved!
