Cookbook. Despite the title, this covers ice creams, gelatos, ices, sorbets, granitas, frozen yogurts, drinks, and non-dairy deserts you can make in your ice cream machine, or even just in a tray in your freezer. Along with your basic vanilla, chocolate, strawberry, etc, there are some real off-the-wall flavors in here, so if you've ever wanted to make beet sorbet or avocado ice cream, this is the book for you. The recipes list the ingredients in metric volume as well as in cups, but total volume varies from recipe to recipe and I would have liked to have a final total volume for each recipe, just to get an idea of whether it would fit in my machine or not.

I'm looking for a cookbook that'll give me a lot of information about fat to water to fruit to sugar ratios and tricks to thicken or thin any given frozen desert. While this has an introduction that goes over equipment and the basic facts of the ingredients, it doesn't go into any depth about substitutions or fiddling around to make things low fat.

Three stars. Lots of different kinds of frozen deserts, with lots of different flavors. It has an index and tips and variations for each recipe, but isn't a great resource for fundamentals and it doesn't have near enough pictures.
