So much variety and so many ideas to mix things up! After reading all the recipes, I wish I could try them out all at once. Rigg presented many flavour combinations that range from the traditional to the more experimental, and also included tropical pairings. Coconut & mango anyone? I was sold the moment I laid my eyes on that recipe.

One important thing that was left out was the importance of banging the trays of just-piped macarons on the counter to level out the batter and remove air bubbles- in nearly all her macarons they have bumpy shells where the batter settled but didn't level out while resting.

After MANY failed attempts at making macarons, I have finally mastered them with this book. I have made them 5 times in the past week and all came out perfect. LOVE IT

A good introduction to macarons for the amateur baker.
Very good for recipe ideas, but have found better results from other macaron cookbooks.
