This book is very out-dated. Back in 1992 fructose, margarine, and concentrated fruit drinks were the norm and the recipes in "Great Tastes" from Canyon Ranch call for them. With the present day trends tending towards natural, local, and farm-to-table, this edition will not make any friends. (Research has since proven fructose to be harmful to health and we all now know how awful margarine is.) There is also no mention of gluten-free (that I have found), another current trend. Most recipes in this book call for egg whites, yet we now know the bulk of the beneficial nutrients are in the yolk, which do not adversely affect cholesterol as horribly as was originally reported.
However, it's pretty easy for home cooks with experience and confidence to find their own substitutions. Those preferring butter or coconut oil over margarine will know to exchange it in the recipe. Use the whole egg, not just the whites. Etc.
Canyon Ranch actually does have many newer edition cookbooks. I would use those rather than this 1992 edition. It's out of date and actually unhealthful.

I love this cookbook and refer to it often. The photos of the recipes are gorgeous and the recipes themselves are not difficult and taste fabulous. If you're looking to eat healthier this is a nice cookbook to add to your collection.
