Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

The title translates, I think, to "Fear of the Dark." I got a chance to look through it while staying in Italy. I'm certain I would have liked this more if I was able to read Italian. But the art is stunning, and the concept of it--a postcard book that takes various artists interpretations of monsters and fear--is beautiful.
