Simple, classic dishes with step by step instructions on doing them with a professional flair even at home. This is a great resource for how to do a particularly good job cooking classic, well-known western dishes.

I have been a profesional chef of some minor acclaim for 16 years, and I think that this is quite simply the best cookery book ever, I don't disagree with a single thing! If you want to learn how to cook or need some more confidence buy it!

Precise, classic French technique applied to popular dishes for the home cook. Not much faffing about, which is a welcome change from the recent spate of meandering, "chef's journey" cookbooks.
