I picked this up on the cheap at a local book sale, and I was pleasantly surprised to discover a minimum of D'Artagnan Meats pimping going on. That being said, this is less of a "hunters" game cookbook and more of a gourmand's cookbook for dishes using game and specialty meats. A number of sections actually deal with farm-raised birds. Many of the recipes are French or French influenced , and and rich ingredients abound (foie gras, Armagnac, heavy cream, black truffles, et al.). Overall well done, but be warned that many of these recipes are not cheap to produce (at least if strictly following the ingredient lists). 3.5 stars.
