The cooking of Poland, rather than being insular, is reflective of the invasions, occupations and migrations throughout the country's history. But the resultant dishes are all marked by adaptation to local ingredients and local tastes. This short book contains just a few dishes, all of which are representative of the national cuisine: bigos (hunter's stew), pierozki (stuffed dumplings) and borscht. Even in this small sampling, there are some pleasant surprises, for example, placek potkruchy (a sort of shortbread but made with eggs and sour cream). This cookbook is intended for younger cooks and for those completely unfamiliar with Polish cookery. It seems a good choice for those uncertain about getting into this cuisine. It would have been improved by guides to pronunciation.
