I've never made something from this book that I didn't think was great. Each "classic" has a really informative and interesting story about the dish's history. The recipes are thoughtfully constructed and precise, and I like how there is commentary on the different test recipes that lead to the perfected version.
I love these books; the author and staff take recipes and cook them using different ingredients and methods until they have the best tasting one. The banana bread recipe is to die for. I only rate this 4 stars because the range of recipes are limited.
Excellent cookbook. Gives a bit of history around certain dishes as well as reasoning behind the choice of kitchen equipment used in the recipes and how the recipes came to be. Not every recipe is easy, most are though, but every recipe I've made has turned out very well.
