Another great gluten-free resource. I've found that some of the recipes are really daunting because of the list of ingredients (i.e. sorghum flour, quinoa flour, tapioca flour, millet, ground flax seed, etc. all in one recipe!) which are not only hard to find, but very expensive. However, the pizza dough recipes are outstanding as well as the sandwich bread recipe. I substituted her flour mixture with my basic brown rice flour and potato starch mix and it turned out great.

The guide to gluten free flours was very helpful! I would’ve liked to see more pictures in this book, and at least one recipe without xanthan gum. Gluten free French toast comes out well!

This book was given to me as a gift. Although I don't have a gluten intolerance, I'm curious about baking with alternative flours. I have found most of the ingredients needed at my local health food store and to save money will try and find several recipes that use the same ingredients. The bread machine I have got really good reviews for its gluten-free setting and baking. So, I am looking forward to trying out a few of the recipes in the near future.

It's all in black and white and I felt like I needed a degree in chemistry to make the bread. booooooo
