Hardcover Metro Books Pub. March 2008 From the Italian Country Cooking is about the real food of Italy. It is about cucina povera, the name Italians give to traditional cooking, the kind that is more likely to be found in humble trattorias, homes and farmhouses than in fancy restaurants. As cookbook author Loukie Werle explains, cucina povera has no adequate translation–it can mean “poor cook” or “country food”–but it truly represents some of the most spectacular, affordable and satisfying Italian food that exists. It employs simple cooking methods, seasonal fare and only a small range of ingredients at a time (a few sausages, for example, or cheaper types of fish or meat), so that even the most novice cook can turn out delicious results. Italian Country Cooking, as you’ll discover when you try it, means eating with a warm heart–quite possibly better than you’ve ever done in your life. As a Roman proverb Più se spenne e pejo se magna ... the more you spend, the worse you eat.
This really might be my favorite Italian cookbook, and I have quite a number of them. The recipes are all incredibly accessible and relatively easy to prepare. I really like the simplicity and rustic quality of the recipes that Ms. Werle has collected and compiled for this book. There is something in here for every foodie, and the ingredients called for are generally available in your local grocery store. Each recipe is generally accompanied by a bit of reference about the region of Italy where the recipe originated and its importance culturally. Profusely illustrated with superb photography that makes it easy to see what the prepared dish should like like.
I spent the night reading this cookbook. I have flagged many recipes. I can't wait for the virus stay at home orders to be lifted, so I can cook a meal for some friends! The egg and cheese/ fish and seafood sections are a no go, for me. I'll also just be sticking to the beef and chicken meals.
My favourite and most used Italian cook book. The recipes are simple, relatively easy to make, and work beautifully. The author clearly has a great knowledge and respect for Italian food.
The recipes in this book are easy to follow and turn out great from the actual directions without having to change or add things. Friends and family have loved what I've made (so far)
