Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

I knew very little about this man before I read the book, but it opened my eyes to see that even back then there was suffering and it was as if I was there with him, struggling to live each day and seek happiness. Even if there were missing pieces, it really made you feel, hear, embrace every aspect.

I have to say I found the anti-chronological text confusing. My knowledge of van Gogh's life is pretty limited, and the text within each chapter even hopped around so much I had a hard time forming a cohesive picture of his life.
That said, the highlight of this book is really the self portraits, and it is really interesting to see so many of them together.
