Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

This book is filled with different essays on the New Testament. Ive learned so much about the Atonement of Jesus Christ, historical integrity of the gospels, insights into the lives of Peter and Paul, The apocalyptic writings of John the Beloved, Prophecies of the Apostasy and so much more. It is deep reading and I read many chapters more than once. But I marked many places that I will reference over and over.
This book is an excellent collection of some of the best talks presented on the New Testament at BYU's annual Sperry Symposium over the years. Every one is well done and I learned a lot from reading them and it enriched my study of the New Testament. Together with another Sperry Symposium book, The Testimony of John the Beloved, the two books are a valuable resource on the New Testament.
