Noticed Amazon still sells the book which was the first vegan cookbook I bought in '75, The Oats, Peas, Beans & Barley Cookbook by Edyth Young Cottrell. She was a research nutritionist from Loma Linda University whose books stressed getting all the needed nutrients from a plant based diet. Am always surprised at how many new vegans have no idea that we vegans have been around for decades.

I read this book 41 years ago when David and I first married. It was a great transition book to vegan cooking. I still have a few favorite recipes from this book.
