Timely and useful!

Stretchy Beans is more than a collection of delicious-sounding bean recipes; it is a gateway to a more economical and nutritious, planned method of feeding a family on a tight budget without boring them and yourself to tears. It does this by explaining how the recipe collection came about and includes a number of tempting dishes that flirt with a wide range of different ethnic cuisines that are appropriate for even less experienced cooks. Recipes are grouped by the variety of dried bean, all commonly available at a much more economical price than meat-centric dishes. However, there are options given with most recipes to include a meat ingredient, if desired. Within each bean section, the author provides several menu plans that stretch a pot of beans over three hearty evening meals.

Additionally, the author discusses how to make cost-saving broths using ingredients saved from previous meals, including bone broth, which has gained popularity recently. Another nice touch is the numerous references to additional resources for additional information or obtaining products.

My family often enjoys a big pot beans, and I sometimes end up making too much. This book inspires me to put those leftovers to better, tastier use. I know I will be experimenting with this method and menus. I feel the publication of this book during the COVID-19 pandemic is quite timely, as some of us are struggling with suddenly tight budgets and meat shortages. STRETCHY BEANS certainly directed my attention to options and ideas on how to continue putting filling, tasty, and good-for-you dinners on the table while coping with these difficult times.
