While encouraging a plant-based diet is no longer a fresh idea, this little book nicely includes the basic concepts, great photos for every recipe, and delicious-sounding options. I will definitely try several of these recipes.
My favorite veg cookbook aside from America’s Test Kitchen Complete Vegetarian Cookbook. The recipes are simple, easy to follow, and delicious. They also have pictures! All recipes have a vegan option. My favorites so far are the black bean and sweet potato enchiladas, easiest black bean burgers, and spinach and artichoke white bean dip.
