This is the ultimate guide for those of you that love to can. I wish I had known about this book a lot sooner. In the past, I have relied on books from canning jar manufacturers such as Bernardin and Bell, but found that I didn't really like all of their recipes and some that I really wanted were no where to be found; even online.
The Salsa section is loaded with all kinds of great ideas that I can't wait to try such as Chile Orange Tomato Salsa, Peppery Strawberry Salsa and so much more. There is even a section on International World Traveler condiments and pickles. What more could a person ask for? Wow! Loaded with unique ideas and recipes to help you reap the harvest from your garden. What a great book! The recipes are written up in a very easy and simple to follow format with tips and serving suggestions. I'm sorry I didn't find a copy of this sooner. Now I can't wait for my garden to finish growing!
As it states, this is a complete guide to all things pickled. Well, all things that are pickled and then canned. There are no lacto-fermented pickles here. Even the kimchi is made, water bath canned and then stored. But there are recipes for everything: pears to cucumbers to cabbage to asparagus to figs and even mango. It's a tome of how to prepare, what utensils are needed, and how long to process each step. Most everything is large batch, though, so unless your math skills are better thanine be prepared for many jars and plan to gift some away so you aren't overwhelmed.
