A complete and beautifully illustrated source book on one of mankind’s most basic foods: chicken. From the general historical background to a detailed discussion of the various types of poultry the heart of this book is the 150 step-by-step recipes. Eight authoritative chapters are devoted to stocks, soups, sauces; poaching and steaming; stewing and braising; frying and roasting; barbecuing; baking and deep-frying; far easy specialties; and cold delicacies.
I love this series of Cheese Bible.... The Soup Bible and now the Chicken Bible. What is nice about these books are that they are like encyclopedia/ how to's on their subject. How are the birds raises?????Cooking??? carving????? Receipes???? You will find them all here. The only down side- the books are enormous in size!!!!! :)
