I have lived in Peru for over 6 years. Since moving here I have upped my interest in cooking and have improved a great deal. Peru has the best cuisine and wide variety of options in all of South America...I have traveled most of the continent. This book represents a limited view of what is availbale in Peru...these are just some highlights as seen from a person living in Lima. The recipes included are quite good. I have compared them with some I use and others I have gathered. And in some cases it seems aimed at the US reader to use ingredients easily found there. Having said all this I think this is a good primer for those that have visited Lima and want to recreate some of the dishes they encountered there. But there are many recipes missing including some of my favorites. If you have traveled in Peru and outside of Lima you will know what I am talking about. The shear variety of dishes and the quality of them as presented is quite amazing. I have gotten so used to the quality of food here in Peru that I am now quite spoiled and have little patience for food served to me that is simply "good." Those restaurants I don't return to because there are 3 great ones within walking distance. If you are interested in dipping your toes into cooking peruvian dishes, this is a good place to start. But know it is only a start.
Could have utilized the services of an editor to better organize the recipes and overall flow of the book. But all in all, quite a few recipes I look forward to attempting.
