This book must have been an absolute bombshell when it hit the British market in 1957. One doesn’t have to read many English cookery books to realise how very plain (and in some instances surely semi-inedible) food was in Britain through two World Wars, the Depression of the 1930s, and lengthy post WW2 rationing.

A compendium of ' Foreign Food ' rather says it all!
As possibly a totally new introduction to housewives this set out to explore many standard recipes in various European countries.it does it very well, not sure of some of the techniques but one assumes they were written from advice by cooks from the relevant country, or indeed from their own visits.

My mother had this book, probably the first edition, as she was married in 1957 when it was first published. The bright pink cover, which Persephone use for the endpapers in their edition, brings back memories of the kitchen in the house where I grew up.

Reading it now, which I never did when younger, astonishes me for various reasons. One is that British people were so insular in those days, that the authors have to explain what pizza is. Another is that, while it is never assumed that a family
