Well hello there and thanks for popping by. My name is Wendy Jo Peterson and I am a culinary trained registered dietitian nutritionist. I’ve been practicing as a dietitian for over 20 years and have been teaching culinary arts since 2003. In 2012, my career turned more toward professional speaking and writing, from television appearances to speaking around the globe. I have since published 11 books and have written for many magazine publications. Professionally today I work mostly on recipe development, collaborating with culinary-focused brands, writing, speaking, and food styling for other cookbooks.

Work doesn’t define me. I also happen to be a mama to an adorable daughter and a golden. My husband and I have been a team since 1994, and I’ve enjoyed supporting his near 30 year career in the military. We’ve lived all over the US and in Europe, and have enjoyed traveling the world together.

Currently we live in Germany and are frequently exploring the Alps in our campervan, Olaf. When I'm not recipe developing you can find my nose in a book or my boots on a hiking trail.

Lots of advice from using over cleaning to troubleshooting the Instant Pot. A whole chapter about kitchen staples that are useful to have on hand as well as accessories and tools that come in handy. Two chapters on meal planning and finally 11 chapters of recipes for basics, breakfast, meats and poultry, bowls, one-pot-wonders, side dishes, soups and stews, global recipes (including German beef rouladen - woot, woot!!), appetizers, beverages and sweet treats. Overall, quite a few nice recipes with thorough instructions that will help even an Instapot novice like me. The final chapters have a top ten of tips, ways to use pulled meats and meals to modify for babies as well as keto-friendly meals. In the appendix one can find a Metric conversion guide and safe cooking temperatures. A few more pictures with the recipes would have been nice (there are only 8 pages in the middle with a selection of recipes from different chapters), but still a very handy book for anyone starting out using an Instant Pot.
