As a vegan, I am always on the lookout for cookbooks with quick, easy, and delicious animal-product free recipes. This cookbook is just that! Great layout. Good food. Simple prep. Although some recipes take longer than others, I believe anyone (not only vegans) will enjoy these yummy recipes. I took a star off because I'm not a fan of instant pot recipes (not all used an instant pot); they're okay, but I don't seek them out. When it is hot as heck outside and there is nothing "cool" to do but reading sitting in front of the a/c as everything else makes you end up a sweaty mess, it is the perfect day for a speed reader. (Yes it is hot and humid in Canada!)

This is probably my favorite vegan Instant Pot cookbook, and there are surprisingly many that I've read. It's well laid out with nutritional information provided, and color photos for about 1/3 of the recipes (I really wish there were more!). I know that some of the recipes will be successful, as some are ones I already do in my IP. For the past few months, I've been working on being more healthy and dragging my family along for the ride. Part of that is moving toward a plant-based diet. I don't see us ever completely giving up meat (my wife and son love steak and sausages too much at this point and pushing too far will only make them rebel completely) but they're both on board for trying anything I make. This collection of recipes was very helpful to me – it not only explains the purpose of the instant pot well, but gives you numerous of occasions and how to’s so you can maximize your purchase. I go vegan for about 2 months every spring and autumn for lent and these recipes have been a lifesaver this past few weeks: full of fast, pool proof delicious and different meals. Honestly, highly recommend!

Overall a nice addition to the vegan kitchen, I'm always looking for more instant pot cookbooks.
Recipes are marked with gluten free, soy free, oil free, nut free for easy avoidance of desired ingredients. I love that oil free is included, as I try to avoid oil when I can, but don't see it in cookbooks often.

This has a good variety of recipes that should satisfy just about any tastes. I however did not like how many of the recipes included some processed vegan alternatives such as cheezes. This is a good first vegan Instant Pot cookbook because it does have good coverage of the staple foods that can be made in the Instant Pot.
I would recommend this book as a first vegan Instant Pot cookbook.

If you have an Instant Pot because you like to dump, set, and forget to get a meal on the table quickly, this book doesn't have a lot of those types of recipes. It's mostly full of more complex recipes which may also require the use of your oven or stovetop as well as pre-cooking time (like soak time for cashews). I very recently switched to a whole food plant based diet and have been looking for all the vegan cookbooks I can find. I was very excited to see Vegan in an Instant and find out what delicious meals I can cook in my Instant Pot. This book did not disappoint! I have tried a handful of recipes out of this book so far and have quite a long list of what I want to make from it. Each recipe has been quite good and fairly simple to make. I really enjoyed the variety of recipes found in this cookbook. There were dishes from many different ethnicities, and there were a lot of options for different types of meals. There were definitely dishes that probably didn't need to be made in the Instant Pot, but this is an IP cookbook after all. I absolutely love this cookbook!!!! Marina did a great job teaching the readers the ins and outs of the Instant Pot, perks and tips that were directly related to plant-based cooking which is something many people, like myself, have trouble finding.
The colours to each recipe photo were vibrant and each photo inviting, which is something I wanted to make note to include in this review.

Last year, my husband HAD to have an instant pot. He does all the cooking in the house, so I said why not? Well, you can imagine that we never use the instant pot ever (shocking).

Let me start out by saying, I do not own an Instant Pot nor have I ever used one. I have been thinking about getting one, and this cookbook made me realize that I think I need one in my life. The author shows the reader just how easy putting together a meal can be! I really wish there were pictures for each individual recipe; I’m a very visual person when it comes to cookbooks, so if a recipe doesn’t have an accompanying picture I most likely will skip over it. This book is great for anyone looking for easy vegan instant pot recipes. There are labels on the recipes to easily see which ones are oil, nut, soy, and/or gluten free. You can also easily see the prep and cook times so if you are in a hurry you can quickly glance at what you can make. Although there are quite a few photos, I prefer cookbooks with photos for every recipe. Photos are what makes me want to try the recipe so without it there were quite a few that I skipped over without even seeing

A great vegan cookbook to add to our collections. As a vegan I appreciate every vegan cookbook and this is one I learned a lot from . I enjoy the pleasing layout and sensible receipes that are easy to follow. This is a great addition to your kitchen. What I love is the anti inflammatory receipes and the receipes are made for the instant pot which I use quite often in my kitchen and love experimenting with. This is an excellent vegan and instant pot cookbook. I have found several delicious and easy recipes. I am not vegan but often need to prepare vegan food for large church activities (for those that either are vegan or have allergies). This is really a great book with a ton of usable recipes that could be converted to other cooking methods if you don’t have an instant pot. I received this book from NetGalley for an honest review.

Vegan in an Instant... Although the recipes are made for Instant Pot appliances, they can be altered and easily made in traditional ways like stovetop and oven. I appreciate the variety of textures, flavors, cuisine types offered for consideration. Some traditional comfort foods are included, altered a bit for the Instant Pot. Wide variety, desirable pictures, wish there were more images.

I wanted to read this cookbook because I am trying a vegan diet and I hoped to find some great recipes. I didn’t find any new recipes that I liked in this book, but a true vegan might. Some of the recipes I was already familiar with but it was helpful to see it for the instant pot.

pretty simple recipes and sometimes over-reaching a bit, but a good guide is you are perhaps using the instant pot as your primary cooking equipment and/or have a very tiny kitchen and want to maximize it's use.

"Vegan in an Instant" turned out to be the cookbook I didn't know I wanted let alone needed! Nowadays Instant Pot everything is the way to go and honestly these recipes were terrific and fun to do. These recipes were easy to follow and absolutely delicious. This book is totally worth the price.

Quite possibly the best vegan instant pot cookbook I've looked through yet. I just look at all the recipes and think "hmmm with a bit of cheese..." I don't know why I check out vegan cookbooks.
