A fantastic cookbook that offers more than just recipes. It also gives an inside in the tradition of american cuisine and it changes over the years. I especially loved the background information the book is providing, especially for non-americans. The perfect book for everyone who is interested in the american cuisine.
I really liked this book!!! Besides being huge, every region (or many) of the United States was covered in this very comprehensive book of American foods. The pictures were excellent and recipes are sprinkled in.
I normally love the Culinaria series but this one glossed over most of the divisions in the US and missed what I thought were the obvious great food contributions of many regions. Pretty pictures, but I haven't bothered with the recipes.
