I would say 3 1/2 for this book. Most of the recipes use a lot of canned ingredients, making them quick and easy, but I would be worried about the sodium levels. Having said that, I do think there is a lot of room to tweak and change things around. If the recipe calls for canned carrots or tomatoes and you have the time by all means chop up some fresh produce. Using home-made stocks and broths would be yummy. The book has recipes for chilled soup, chicken, beef, pork, seafood, vegetarian, and slow-cooker so you will find something for everyone.
