Holidays and special occasions are also handily scaled to size, with a sheet‑pan Thanksgiving dinner for two, menus for a romantic dinner or a stay‑in movie night, and more.
I have some severe issues with their "meatless: section. Slow-Cooker Couscous-Stuffed Peppers has 1/2 lb of beer, Cheesy Potato Soup has 2 slices of bacon and 2 cups of chicken broth, etc. By no definition are these meatless dishes!
That said, there were some delicious meals:

So many delicious desserts and such nice, small portions!
I loved that the recipes were written to make one or two portions. Most recipes had pictures and there was an easy to spot "color coding" at the top of each recipe to tell if it was quick to make and if it used 5 ingredients or less. There were definitely a number of recipes in here I want to try.
I love Betty Crocker cookbooks. Easy recipes that don't require exotic ingredients and help you out when you need substitutions. I loved that these are small items. They feel doable. Found a lot that I want to try!
Yikes! The recipes look decent if uninspired, but what the hell is going into them for them to be so high in calories?!? The pumpkin mug cake alone sets you back 1180kcal! For ONE MUG CAKE! WTH?!? Oh, no wait, I get it now. It's not meals for one or two people, it's one or two to get the calories for AN ENTIRE DAY.
