My mom is a fan of the author and bought several copies of this book. She gave me one with the instant pot she got me for Christmas last year. Neither of us is vegan, we just enjoy cooking different kinds of recipes. I absolutely love this cookbook. I've made maybe a half dozen or so of the recipes and all the ones I've made have become part of my meal rotation. The refried beans are incredible, I make them often to put in fajitas and people are always so impressed with them. The broccoli and "cheddar" soup is phenomenal, and I just made the alfredo pasta and love that too. Highly recommend for easy, delicious instant pot recipes that makes it easy to eat vegan more often!
I love this cool book, it’s written in such a funny narrative that is easy to understand and simple ingredients with substitutes for people like me in the uk who may not have access to things. And the 7 day challenge at the back gives a real on-site to what a week of eating WFPB can look like 5stars
