One of my all time fave cookbooks! Frank Davis was a great guy and amazing chef. Met him several times over the years and he even helped me with homework for my culinary class in high school one time. lol this book has traveled across the world with me and held up beautifully and allowed me to make some good down home Cajun food that makes everyone happy!

If a friend is interested in giving Creole/Cajun cooking a try for the first time, tell them to find a copy of Davis' book. It's clear enough for the novice cook without talking down. I've modified it a little, but his red beans and rice is my favorite.
