I had seen this book at Costco and didn’t purchase it because the recipes didn’t sound interesting. When I was able to purchase it at a library bag sale, I thought it would be worth taking it home to see if there were any recipes I might want to try. Well, it turns out my initial assessment was right. These recipes just don’t appeal to me.
I am super stoked about our new instant pot. I had envisioned using it to make roast and etc--large cuts of meat that would normally take a long time to cook or stew or whatever that you usually do in the crockpot all day. I am really surprised that this cookbook has so many recipes that are essentially "put this veggie in and cook it for one minute." I hadn't thought about making things that already don't take very long to make in the pressure cooker. Hmmmm.
