Beautiful photos, each mouth watering and tempting. I took a long time to review this book. I tried almost all the recipes, and invited friends over to sample the dishes with me. I have been looking for many years for a vegetarian Vietnamese cookbook that spiced the dishes correctly. To me, the spices are the most important part of the dish. Inspired, no doubt, by this Canadian author's stay there, as a result of his wife's job (the family lives now in Bangkok), this book is certainly carefully done - not just a bunch of recipes grouped together. The recipes are vegetarian: Buddhist and Cao Dai monks and nuns practice it, and laypersons have certain days when they do it, so it's fairly easy to find vegetarian places to eat, especially on the certain days that are mentioned in the book. An interesting combination of traditional vegetarian cuisine and modern street food. Has a decent collection of make ahead pantry items like vegetarian nước mắm and the like. This book also reminds me I need to look into a Japanese mandolin or the like for creating matchsticks. There's a plethora of salad, rice and pho dishes along with a small assortment of other recipes.

Most recipes are four servings, there's a fair number that I don't think can be saved till the next day, not good for us bach

You do not have to be vegetarian to love this book but if you are - even better. Cameron Stauch has written a beautiful cookbook with recipes of varying difficulty. His explanations of what you should have on hand and his directions for the recipes are easy to follow. The book is worth owning if only for some of his simpler recipes like mushroom pate and pickled vegetables. Cooking your way through this book is a trip through a historic culture with a delicious, vibrant and healthy cuisine.

This book is gorgeous and the recipes are lovely... It simply is a bridge too far for anyone with other responsibilities beyond feeding themselves to undertake these recipes, which are generally long on prep and ingredients. But gosh it's beautiful, no question.
