Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

My daughter loves this book. I like the stories, but I have issues with the book. Maybe some stories predate their muppets, but Elmo's mom is all wrong in one, his dad is all wrong in another, Grover's mom is off in another, Slimey is the wrong color in another. It's confusing.
This is a reprint collection of 19 out of the 21 stories published as 7 short picture books (24 pages each?) between 1989 and 1992. It's one of my 2-year-old's current favorites and she hasn't seemed to notice that how long ago they were written make some things out of sync with current Sesame Street. For example, Elmo says "I" and his Daddy predates/doesn't look like the Louie Muppet. Not a lot of literary merit, but there are a lot of relatable sequences like Grover being difficult to get to bed ("Oh my goodness, Mommy! You forgot the marshmallows in my hot cocoa!" he says instead of "thank you"). Plus it's a great value for parents as very young children like it and you'll get more variety than them asking for the same 24-page picture book over and over.
My only issue with this book is that it is SO long. We quickly found a couple stories we loved and then could not get past them, so we didn't get a chance to read as many of these stories as I would've liked.
