Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Ashes Battles and Bellylaughs is a book with stories from various English and Australian test players that involve the Ashes matches. The players include Allan Border, Robin Smith, Richie Benaud, Ian Chappell, Keith Stackpole, Colin Cowdrey, Tony Grieg, commentator Henry Blofeld and umpire Dickie Bird.
As expected, like it is usual with these books, the promised bellylaughs are few and far between. Some interesting insights but overall, like a lot of sports books written by "larrikins" the result is ok but quickly forgettable.
