Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Finally completed this one.Found it lying in my home out of no-where. The short book has a nice collection of short stories and many of them reminded me of my childhood fairy tales I had read or heard based on same.
I read some of my favorite stories.. The last leaf by O' Henry.. Even though I know the story I was waiting for the end.. Not that's a short story worth telling.. A story of Hope and determination..
And I also read some other classic stories by Saki, Leo Tolstoy and a few other authors..
