So many great recipes for vegetables, Asparagus, Beets, broccoli, cabbage, carrots, eggplant, peppers, tomatoes, and zucchini. I've tried many of the recipes and will be trying more. Carrot Cake, chocolate zucchini cake, zucchini bread, pumpkin bread, Spinach Zucchini Frittata, and eggplant parmigiana,
