I love this book and I recommend it to anyone wanting to cook, learn more about food, learn more about Australian food and cooking. As you read through you realise how we, as Australians, come from all over the world and we should revel and rejoice in that.
A great celebration of the diversity of this country.
I don't know which recipe to cook first. The good thing is that many of these recipes are a reflection of our past and as such I have already made some sort of variation of some of these recipes.
I know, I'm going to start with Marc Gleeson's glazed duck and the Walmsley's Marry me caramel biscuits.

This is an overview of a wide range of Australian cooking. The diversity of this books is great and the recipes look exciting. I have yet to try any of there, but there are certainly some interesting one.

Will definitely be making some of these recipes in the future. It was also nice seeing dishes that I grew up with and cooks/chefs that I grew up watching on TV when my mum had the cooking channels on

I feel bad giving this book a 3 it is well made and an awesome coffee table book with some great pictures and some of my favourite chefs but I just can’t find many recipes I would cook out of it and some of the ingredients in some of the recipes I’ve never heard of. I cook and read a lot of cookbooks and this one has recipes with quinces,wallabies shanks, cultured butter,shankleesh,pine mushrooms and slippery jacks,frikkadels,prawn powder, chipotle in adobo,maize flour,flora danica culture, aji Amarillo paste, shiro shoyu, lamb knuckle, palm hearts,and on and on and on I could go. Ok there is a lot of recipes I can make with what is in my cupboard but I was expecting an Australian cookbook to have more authentic Australian foods like scones and pikelets and barramundi the food we love is on the cover and I would have to spend three hours travelling to the nearest city to buy some of the ingredients. There are some good recipes for chocolate in this book there is a chocolate mousse that is to die for and some great desserts but for the price and the other books you can buy for the same price point I would probably not bother the book is 427 pages so I’m sure people will find a few things to cook in this book.

A superb cookbook of gigantic proportions, my 2019 hardcover edition has a different cover image but the content is undiminished and possibly added to since it was first published. Initially this cookbook was displayed in the foyer of my local library and I borrowed it immediately, but have yet to try all the fabulous recipes. I have to keep renewing it! The book complements my copy of Australian Native Foods recipe book The Oldest Foods On Earth by John Newton. We should keep trying new things, creating new dishes and exploring new native food sources. These two books are a great place to start.

A great eclectic book of recipes from many chefs I knew of and a few I didn't. Gave me some great inspiration for family dinners and morning teas.
