I love this book! I am a little prejudiced, since one of the authors is my mom, but I HAVE been cooking from it for years. I love that it has basic info about vegetables (each chapter features recipes for a different vegetable) and how to buy, cook, and store them. If you're looking for a good vegetable cookbook, this is one to seek out!
