Food and Cooking of Africa and Middle East: A fascinating journey through these rich and diverse cuisines: the culinary history; the ingredients; the techniques and over 150 authentic dishes
A fabulous collection of delicious recipes from all over Africa and the Middle East which captures the authentic flavors of a fascinating and undiscovered culinary region.
This book, like the others in the series (at least I think it's a series), is full of colorful pictures and has great explanations of what for many Western cooks are foreign or little-used items. I was hoping for more veggie recipes in this though, given the history of vegetarian dishes in these regions. There is a vegetarian section but the bulk of the book is focused on meat, chicken, and fish dishes. A good deal of the meat recipes are noted as being dishes made for special occasions, which is all fine and good but I was looking for something that was a little more day-to-day. It's pretty clear that the cookbook is aimed at Western meat-eaters, but it is an interesting cookbook to have nonetheless and I have used it a few times.
We picked this one up at Borders in the bargain section. The recipes are colorful and beautiful, and I'm excited about trying a lot of new things. I particularly like this series because the beginning of the cookbook has a lot of information about different foods and their importance to the local culture.
One of my absolute favorite cookbooks. It taught me a whole new style of cooking, is full of a wide variety of incredibly tasty recipes, and is easy to follow. Very much recommended for anyone wanting to try this wonderful cuisine.
