Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

From the recently discovered diaries of Troy comes this account of magic, superstition and sinister goings on. An interesting read if you can pick the book up inexpensively.
This was a fun little graphic novel. I liked the setting. I think I would have liked it better as an actual novel with mroe details. It's really more just a skeleton of a story, but it's fun.
