A piece of advice. When the weight starts to dance, turn the fire down to the point that you barely hear steam escaping. Just as you can't heat water higher than boiling, 212 degrees (100 C) by adding more heat, you can't push a pressure cooker at 15 PSI (pressure with the normal weight) past 250 degrees (121 C) by making the weight bounce more. All you do is use more heat and boil away the water faster, risking burning your meal.
