With fall rapidly approaching, hearty meals are often needed. Jones' Easy casseroles cookbook : simple recipes for convenient meals & side dishes contains many of the tried and tested dishes I've prepared for my family, however, two particular egg dishes, which could be used for any meal during a cooler season, piqued my curiosity. Both the Quick Breakfast Sandwiches and the Breakfast-Ready Casserole could be used for any meal and the sandwiches can be prepared overnight for use in the morning or in the morning for the evening meal. I am also intrigued by the Sandwich Souffle which would be good with a fruit salad for a nice lunch or brunch. There are no pictures as this publication is in black and white.

Love this cookbook. All that I have tried so far are great. Family loves them. I double the recipes to freeze 1 casserole. Works every time.
