Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).

If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

‘The Forward book of poetry 2000’ by various poets
Did I mention Poet Laureates? This book includes two: Simon Armitage writes the foreword and Carol Ann Duffy has poems that eventually appear in ‘The World’s Wife’. What a way to start.
The Forward competition anthology brings together the best of contemporary poetry for that year and is an excellent way to look at how poetry is developing. This is very much a ‘historical’ collection being nearly a quarter century old but still filled with stunning verse:
Jane Draycott’s ‘Braving the Dark III Piano-movers’ (particularly); Jo Shapcott’s ‘Mandrake Pie’; David Hart is ‘Late’: “Sheep on the line before Bucknall…”
Excellent anthology!
