In Perfect Pirogi Recipes Rose Wysocki shares both traditional and contemporary recipes for pierogi dough, fillings and toppings. Some are recipes from her Polish Mother and Grandmother. Others are recipes she's collected or developed over the years.

You’ll find a total of 51 recipes. There are an additional 26 toppings listed without recipes. They are very easy to make. That includes recipes for: 10 different pierogi doughs (traditional and contemporary), 15 savory fillings, 6 sweet fillings, 3 traditional pierogi toppings, 2 contemporary toppings, 9 compound butters and 6 sauces. I also included a list of 16 additional traditional toppings and 10 contemporary toppings (without recipes.)

Finally you’ll find a lot of information about the history of pierogi, how to make pierogi dough, different methods to cut, stuff and seal the pierogi, how to best boil, saute, deep fry or bake pierogi, how to freeze pierogi and more. She also provides links to a couple of pierogi cutting and sealing tools that will save you a lot of time preparing pierogi.

Making pierogi at home is really easy if you have the right directions. This book will give you a head start on making perfect pierogi.

Great little book! We love pierogi but we have never made them from scratch before. The recipes were very easy to follow and we had a great time cooking them! My daughter and I made the beef filling with the traditional dough and the bread crumb topping. Delicious!

Everything Pierogi

Wow! I grew up in a neighborhood that was primarily mixed with Irish and Polish residents. I can remember going to friends homes and seeing pierogi being made. I always tried to hang around long enough for the first batch to be ready. We were the tasters. Looking through the recipes brought back that happy memory.
This book is like the encyclopedia of pierogi. There are recipes for just about any kind of pierogi. In addition to several different fillings there are several different dough recipes, including the no egg one I can remember a friend's grandma making. I wasn't aware of all the different toppings and sauces that were a part of a pierogi dinner. My mouth is watering as I plan out my pierogi meals. The recipes included look pretty easy peasey to me. The dough recipes are hand mixed which can be labor intensive but the author mentions that you can choose to use mixers. Personally, I think I will be doing it the old fashioned way. It is just part of the fun in my mind. The author has given many choices, none of which use difficult to find ingredients. The book is a perfect choice for either experienced or novice cooks. I would recommend it for anyone wishing to try making pierogi.

Nice history and collection of recipes.

Really enjoyed reading this book and the history behind them. An old World recipe from China used in so many different countries. Wonder if this was also the base for the filled pasta in Italy. Did not make it to the British Isles which was surprising. Great choice of dough types. I will use my pasta cutters and Chinese dim sum makers to make the filled pierogi. Thanks for writing this book.

Now I’m hungry

A very good book for those who like pierogi. I wasn’t aware of how many ways they could be made. You can also use the fillings and compound butters with other dishes. But why do that when they make wonderful pierogi?

Good book



Good beginner book. I would have liked to see more traditional recipes. I would recommend this book to anyone who wants to learn how to make pierogies.

Perfect Pirogi Recipes
Have loved eating these and have discovered the company has other flavors available.
Starts out with what pirogi are and their history, summary of how to make them yourself, how to cut stuff and seal them, and different methods of how to cook them.
Then it has chapters on how to do each of the above in more detail. There is no nutritional information and no pictures.
Very detailed directions on how to make them suing various methods.
Love the idea of not only cheese, potato but also fruit fillings and toppings. Other works by the author are highlighted at the end.

This is simply the most complete little cookbook you could hope to find for this wonderful food. From start to finish, there's something for everybody.
