A well organized and amazingly comprehensive text to inform readers about foods, cooking equipment and cooking methods with recipes. I see this as a fundamental book for any kitchen.

My favorite cooking reference. I find much more helpful than Joy of Cooking and other such references with much more pleasing visually.
