Not as good as James Beard's book on Bread... My biggest complaint about this book is that the recipes generally make too much - 2 or 3 loaves at a time. Usually I just want to make one, and it is a pain to scale the recipe down. Also, a bit more whole-wheat, wheat germ, and bran for my taste.
That said, it has a great range of bread recipes including rolls, muffins, bagels, tortillas, pita etc. which is wonderful.
