Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

I simply ADORED this book! I can't believe it took me so long to read it. It is such an amazing read and i couldn't put it down. I think every girl should read this book AT LEAST once. It is full of information about everything o teenage girl needs to know, while still being a very interesting story. I can't recommend this book enough. If you havent't picked it up, what are you waiting for?
Great book! It is the second book in the “Health Freak” series and is written through the eyes of Pete’s younger sister, Susie. Her diary covers all aspects that young teenage girls would ever think and wonder and deepens the facts that Pete gives in the first book. A must read!
