The slow cooker proves a godsend when it comes to convenience and time. But, too often, recipes end up with a layer of grease floating on top and hundreds of calories. I had really cut down on using my Crock Pot.
Since the authors come from Cooking Light magazine, you can be sure these recipes are low in fat but high in vegetables and nutrition. Despite the calorie consciousness, most of these recipes still look really delicious; I can tell I will be making many of these dishes again and again. I've fallen in love with my Crock Pot again!
I have made most of these recipes, except the ones I am allergic to the ingredients, and love them! My go to recipes when I want to entertain, just us or feed 60 teachers at conference time! Have always received praises for my cooking when using these recipes.
Who would ever think that I would like anything from "Cooking Light?" As it turns out, despite the title and implied obsessions with fake health .... many of their recipes speak to me as a hippie and are quite delicious, not to mention easy to alter for my own tastes and needs. Sh*t. Guess they have a good test kitchen. :)

A step above any other slow cooker book I've read, though it isn't saying much. I'd like to see some recipes beyond the american classics, but the classics are really good in this book.
