I picked this book up from the library because it was one of the few books they had about kombucha.

Maybe the book isn't bad but it certainly doesn't feel well researched or very reliable. There is lots of talk about old myths and muscle testing and generally things that aren't scientifically accepted today.
Maybe the book was good for it's time but today I don't think I could recommend it. I'm not sure what is a great book but is but I'll try to update this when I find it.
To be fair, maybe the science part about the chemicals is accurate but I didn't wanna waste my time reading that part since some much else was not well researched.

One help bit of info I found:
After refrigerating your SCOBY it could take a few batches before it is back at full capacity
