I almost gave this four stars. I love his message of cooking with ears, eyes, taste...
I have several recipes flagged that interest me. Three stars because there are too many recipes I never want to try--seafood and foie gras. Therefore this is not a book I would want to own. But I recommend it nevertheless. I wish he had written a recipe for vegetable broth. I try to avoid meat when possible, so I tend to relish dessert books instead.
