The snow is gone, the sun is out and we have 60° weather. Spring is near and we are half-past ready to get outside and begin tilling the ground for our vegetable garden! Hopefully, this will be accomplished by the end of this weekend. Our compost bin is bulging with the remains of our last 5 weeks of Juicing, so nothing will be wasted. We will recycle the compost to fertilize the garden and as soon as I finish this update, I am gathering my gardening goodies to head outside and start potting seeds for my herb garden. I'll give them an early head-start indoors while we wait out the last few weeks of winter and then transplant them into the garden when we are sure the threat of cold weather has finally passed.
Gardening will save so much money on our Juicing journey! With over thirty bags of seeds to plant, we are excited and eager to start growing our own groceries! Here's a list of what we are planting this season, in no particular order;
Cauliflower, broccoli, cabbage, celery, beefsteak tomato, cilantro, green onion, bell peppers, jalapeno peppers, chives, basil, lavender, eggplant, red onion, kale, spinach, collard greens, lettuce, radish, okra, cucumber, zucchini, squash, corn, pumpkin, watermelon, cantaloupe, and asparagus!
(yes, I know what you are thinking, but corn on the cob is a must for BBQs and every once in a while, you can enjoy your favorites in moderation...it's not a death sentence when you choose to eat healthy!)
Food for thought: For 1/3 the cost of one watermelon, we bought a pack of seeds and can grow and eat as many as we want!
Juicing, salads, stir-fry and so much more await us come harvest time! I'm even looking into learning how to can. I've already bought a canning pot with the rack inside at a yard sale for 4.00, and now I'm looking for mason jars and the utensils to go with it! Yes, we are very serious. Not only about getting healthy, but about changing what we put into our bodies.
You would be amazed at how we have begun to look at processed foods! I don't even like thinking about sugars and starches anymore. I remember how they made me feel, all bloated, sluggish and always hungry shortly after eating them. Not anymore, now we look forward to a piece of fruit, it tastes like candy now. I put together a big salad last night with fresh homemade salsa for dressing, added a little chicken breast and we couldn't have enjoyed dinner more if we had went out to eat.
Very soon, the produce section of the grocery store can officially kiss my biker-backside! Don't get me wrong, it's not like they haven't been really good to us, but the fact remains, with the massive amount of vegetables it takes to juice, saving 5.00 or 10.00 on a case here and there is helpful, but still very costly! And we aren't planning on stopping at growing a garden either, oh-hell-no! We've been watching videos in the last two weeks on how to make your own cheeses. Our first attempt was ricotta, which came out well. Our next attempt will be mozzarella! You should check out the videos on YouTube, you'll be astounded at how simple it is!
Plus, we are planning to build a chicken coup and begin producing our own fresh eggs again, too. I'm truly excited about this, as I have missed having chickens and really enjoy the act of raising them from chicks to hens. Yep, I'm a country-girl at heart....always will be!
Got to head outside now, time to play in the soil and bask in the sun, but before I go, let me encourage you to look into changing the way you feed your body. You'll feel so much better, both inside and out! Energy abounds!
