GOBLIN STEW

Before your little goblins dig into their Halloween candy get something healthy into their tummies. From  Healthy Holidays:


 


GOBLIN STEW


1 and 1/2 pounds organic ground turkey or Gimme Lean soy sausage

1 and 1/2 cups chopped organic onions

3 Tablespoons olive oil (plus 2 T optional)

3 crushed organic garlic cloves

2 Tablespoons chili powder (or more to taste)

1 teaspoon cumin

1 teaspoon oregano

1 teaspoons salt

1/2 teaspoon black pepper

1 (28 ounce) can organic crushed tomatoes

1 (28 ounce) can organic whole tomatoes

2 (15 ounce) cans organic kidney beans, drained

1 (28 ounce) package frozen organic corn


In a large skillet over medium heat, brown the turkey or soy sausage (if using sausage add the optional 2 T. of oil). In a large soup pot saute the onion in the 3 T. of oil until translucent. Add the garlic and cook a minute more. Drain the fat from the turkey or soy meat and and too the onion mixture. Lower the heat and add the seasonings, tomatoes, beans and corn. Stir well, cover and simmer for 1/2 hour or until it thickens.
